Thai food and bubbly may not be your first choice, but I tried both a dry and an off-dry bubbly with Pad Thai and Panang Curry tonight with thunderous applause from the audience my palate (and hopefully from you guys!).
The dry bubbly (Cava & Proseccor work just as well as fancy Champagne) made the savory flavors jump out more and the sweet bubbly made the vegetables of the dish pop a bit more (carrots, peppers, and bamboo are a bit sweet too me already so that’s how that worked for me).
The place where it worked the best of the creamy/doughy flavor of the wine with the Tom Yum soup… BE PREPARED FOR INCREASED HEAT LEVELS in your mouth when you try this, but already know that the fishiness of the soup is a splendid match with the doughy bread flavors of the Champagne/bubbly.

This bottle agitates the palate by smelling and tasting very different than what it looks like. It has pale and almost frail white and yellow body featuring tiny, pearly bubbles. The aromas and flavors it exhibits though are reminiscent of dark berries, brown nut skins, and deep fleshy fruits (think cherries and blackberries, but from a very lightly colored wine!). I and many other wine lovers have been happy to score it an easy 9 out of 10

White flowers, yellow cakes, and crushed nuts are the main components of this nearly perfect Champagne. The flavors are varied, yet true, and the finish is fresh, clean, and lengthy. The first $150 of this purchase pays for the wine, and the second $30 pays for two champagne glasses that will be collector items as soon as you pop the cork.

Wet flowers, roasted coffee, and fresh bread appear throughout this bottle of wine. The blend tilts towards Pinot Noir, and is structured enough to age until humans walk on Mars. Where many vintage Champagnes go for a burly mouth-feels, this wine is feminine and artful. The bottle finishes with notes of vanilla bean, apricot, and tangerine. We only ordered one bottle of this for T.B. Ackerson so, please, share!

A nose of herbs and lemon zest fit for only the most adventurous palates. Fennel, anise, and coriander fall away to a finish of wild nuts and roasted apples and pears. Drink with the most complex dishes and the best of friends.
